It's a little critter (a plant actually) that can reproduce. In a warm, moist place, give it a bit of sugar and it will make more baby yeastlings and give off nitrogen gas (hence its use in breadmaking) and alcohol (great in beer). You've got to treat it kindly though as its easy to kill (high temperatures or lack of food) or put into statis (by low temps). For a more technical answer, just use google and search through all the hits. Hope you get a gold star now.

Not a criticism, just a few facts. Yeast doesn't give off any gas. It contains enzymes which catalyse the fermentation of glucose producing ethanol and carbon dioxide.
