Depends what you mean by the term 'trimming'. Can you be a bit more precise. After all you can trim any type of meat or poultry.
Preparing a best end of lamb requires trimming, so does the same best end to make lamb cutlets.
If you take a chicken apart you are usually left with : 2 drum sticks. 2 thighs. 2 wings and 2 breasts.
