got loin of pork instead of leg

not sure how to cook this - would i be better slicing thickly and cooking like steak? Would it be too dry if roasted like a leg?

For more on marking an answer as the "Best Answer", please visit our FAQ.You could put a sticky marinade on the pork before roasting - perhaps french mustard & apple & some balsamic vinegar & a little olive oil (stick the whole lot in a blender for a few seconds).
The marinade will give you lots of nice sticky juices from the roasting as the basis for a nice gravy (or indeed 'jus' if you are feeling a bit french).
