Potato and cheese recipes

My children love potato and cheese dishes (potato skins, jacket potato, cheesey mash) but I am looking for some new ideas. Only the eldest likes potato dauphinois so I can't do that (I have a lovely recipe but it is a bit of a faff). Any one have any recipes I could try? Thanks

For more on marking an answer as the "Best Answer", please visit our FAQ.It may be a bit too similar to what you already do but baked potatoes with the flesh scooped out and mixed with softened leeks and garlic with cream or creme fraiche, a touch of mustard if you can get away with it and then scooped back into the skins and bung the oven with a bit of cheddar sprinkled on top.
Have you tried Pirogies? (there are loads of different spellings of the word.) They are Polish, dead easy to make and if you make a huge batch they freeze beautifully.

This is a dish I borrowed (ok pinched) from a M & S dish. Cut potatoes into cubes and put into a pan. Cover with salted water and bring to the boil. Don't cook for too long, about 5 mins is enough, Meanwhile, put a roasting tin in the oven with olive oil in it - the oil must be hot. When the potatoes are half cooked, drain them well and put them into the hot oil. Add a punter of cherry tomatoes and stir to make sure everything is coated in the oil. Return them to the oven and roast at high temp for about 10 mins. Turn everything over to cook evenly, cover with grated cheese and roast for another 10 mins. Absoutely delish xx
