It's called water hammer and it's a hydraulic shockwave usually caused by loose pipes moving when a tap or valve is closed quickly. To stop it you can fit a water shock absorber (this has a sprung diaphram in it) or an accumulator or replace some of the copper pipe with plastic or try to secure loose pipes.
