can a employer take your 45 minute break each day or night and bank it and make you come in and do a extra shift plus doing a extra shift have a 45 minute break that day and have that break banked?

By law you must have a minimum of a 20 minute break if you work more than 6 hours at any one time.As for the other 25mins break you need to read your contract of employment. The key thing here is, does the shift include your break time? In other words does (say) an 8 hour shift include your break time or not. Also unless you have agreed in writing to the EU exemption rule you cannot be asked to work more than 48 hrs a week which it sounds to me you are doing if you are not being given any breaks.
