Greek Style Rice Recipe

Hi, for my birthday I went to a Greek style restaurant (though a bit more cypriot as my Greek friend said) and they served gorgeous rice with a mixed salad and mixed kebabs.
I'd love to make it at home if anyone has any tried and tested recipes for how to make it?

For more on marking an answer as the "Best Answer", please visit our FAQ.There are plenty of cypriot rice dishes-being cypriot myself, but generally rice dishes are improvised homemade own creations rather than being a dish that has an actual recipie-you dont say what kind of rice you had? was it tomato based? as i know the recipie for that one, try calling the restaurant and asking them
You need to use good stock and cook the rice by the absorbsion method so it takes in all the flavour.
You can do this in the oven in a casserole dish with a lid or in a thick bottom sauce pan on the stove.
Even plain rice is great if you, sweat of a few diced onions and a little garlic (no colouring) then remove do the same with the rice ( till it goes seethrough not long) and add the onions and boiling stock (double the volume of stock to rice, bring to the boil and stir.
You can add a bayleave too if you wish
Cook on a low heat lidded till almost soft then turn off and leave for 20 minutes, fluff with a fork befor serving.
