Cold Turkey?

I wonder how when the contestants on Masterchef bring their food out for tasting, that the judges manage to try them all when they are fresh and hot or does the last person on have to keep it warm and not so fresh?

I don't think the chefs have heard of serving spoons & tongs! Why must they handle the food so much.
