I like my steak to be warmed through, and that's it - bloody as hell in the middle and almost still mooing.
Whilst I find it pretentious of some chefs to refuse to cook a piece of steak well done, it does beg the question as to why anybody would want it well done! IMO, if you have a well done steak, you may as well just chew on a piece of shoe sole leather - utterly tasteless and tough. As i say, just my opinion, but I find it astonishing that somebody could ask for a nice piece of marbled fillet well done!!!

My mate swears by blue - how we laughed on a ski trip to France when he made a big song and dance in a restaurant one evening, deriding even those who wanted medium as philistines.....three hours later he was on the big white telephone, enjoying his steak for a second time! Its got t obe cooked a bit more than blue for my liking!
Just out of interest (no connection to me) the Goucho Grill off Picadilly does a wonderful range of steaks, the chef brings round all the cuts on a platter beforehand so you can choose - well worth a visit if in London and wondering where to eat! Trouble is, you want them all!!
