Can someone please share their homemade curry sauce with me.
I have.....2 chicken breasts which will be stir-fried in a wok along with chopped onion, peppers, mushrooms, pineapple and any spices such as turmeric, curry powder, ginger and garlic.
I also have natural yoghurt, single and whipping cream, tomatoe puree and coconut milk.
Shall i just throw it all together (obviously adding the ingredients slowly so i don't over do any flavours etc) and then simmer and let it reduce down.
Any tips and help would be most welcome

The ingredients you list aren't necessarily from 1 recipe for a curry, but the whole point is you are making a 'stew' so seal the chicken, soften the veg., spice it, add stock and t/paste, season, and simmer, finish with the c/c milk and allow to thicken. Serve with a raita (thin yoghurt with mint/cucumber) a nice vege side dish like curried chick peas or spinach and potato, and naan breads instead of rice.
Andy, all the ingredients you list are fine for a really super curry--it would probably be called chicken Korma in an Indian restaurante-- It sounds so good that I have taken a note of contents and will try it,your probably onto a winner.Yes just throw it all in with the cream last so it doesn't curdle,hope your wife approves!
