Syncing iphone to computer NOT vice versa . . .

I am trying to sync my iphone to my laptop (ie transfer info from the phone into itunes on the laptop) however it seems to want to sync the info from the laptop to the phone instead of the other way round.
I'm sure this is a simple problem so what am I doing wrong?

There are several third party applications that claim to let you copy the music, films and photos back to the computer (not seen one that does contacts).
For example (I've not used this as I don't own an iPhone)

However, they will just let you copy the files back to the computer, you'll then have to reimport them into itunes.
