I am a bit confused by the overload of information on the Oyster website. What is the cheapest way to travel a one-off off-peak return journey from outside London to central London? Do I just ask for a one day travel card at my local rail station (as before)? Or is it cheaper to travel to my nearest tube station (in or outside the boundary) and buy a ticke there?

It depends very much on the specific journey - it's not possible to generalise.

Depends whether the travelcard bought with the rail ticket is for a lot more than just the central zone, I suspect. A one off, off peak, return for central London, bought at any mainline station, need only cover the central zone and the machine will automatically sell you the travelcard for that zone.

It's usually cheaper to buy a Travelcard on your rail ticket. (i.e. simply buy it at your local rail station). In particular, if you'll be travelling to London with a Network Card (or any other Raicard) you'll get the appropriate discount applied to the Travelcard as well as to the rail fare. Even if you've not got a Railcard, it's still marginally cheaper [in most cases] to buy your Travelcard and rail ticket together.

As Ubasses indicates, the National Rail website allows you to check prices to London, both with and without a Travelcard.
