Delia`s Seville Orange Marmalade Recipe

Has anyone ever done this? It`s twice as much sugar as fruit. Seems an awful lot.

SJ, Seville oranges are very bitter hence the need for so much sugar.

Thanks society. I`m three quarters of the way through Delia`s one so I guess I`ll see what happens but I have more oranges so I`ve bookmarked your recipe and might use that for the next batch.

I've got a Marguerite Patten recipe for Seville Orange Marmalade which also has twice as much sugar as fruit. It's absolutely correct and tastes wonderful without being too sweet - definitely a grown up marmalade.
