Euros For Holiday Money - What Country Do They Come From?

This may seem a silly question, but I cannot find the answer.
I know that euro notes have a prefix which shows which country they belong to ie. 'Y' for Greece where I am going. I also realise that any country's Euros can be used across the EU. But..........
as we in UK are not in the Euro, where does my bank or the post office obtain there Euro notes. Are they French, German, or what.
