You need 1lb/450g spring greens, veg oil for deep frying,1/2tsp salt, 1tsp castersugar, 1tbsp ground fried fish to garnish (optional).
Pile the spring green leaves on top of each other, roll into a tight sausage shape, thinly cut leaves into fine shreds, spread them out to dry (important, see below).
Heat the oil in a wok or deep pan until hot, deep fry the shredded greens in batches, stirring to separate them.
Remove the greens with a slotted spoon as soon as they are crispy, but before they turn brown, drain, sprinkle with the salt and sugar e

Sprinkle salt and sugar evenly all over the "seaweed", mix well, garnish with ground fish if liked, and serve.
Make sure the spring greens are dry before putting them in the pan, use a salad spinner or the like if you're not sure, or you'll end up with a pan on fire, like I did the first time I tried the recipe. Ground fried fish is bought in re-sealable tins from chinese grocers, tastes sublime.
