Veggie sausages with mash and onion gravy - I'm just trying to think how well veggie sausages would freeze and microwave though, it's been quite some years since I was a veggie then vegan for a while.
If you get some Quorn mince (again, check about the freezing) then you could do a cottage pie and maybe spaghetti bolognese.
Cheese and potato pie.
A veggie tart/quiche.

Just another thought, having a selection of seasoning available and things like veggie stock cubes, Worcestershire Sauce (depending on how veggie she is), soy sauce etc... as things like quorn mince don't have a lot of natural taste to them.
Some people don't like veggie substitutes though and have differing views on things like animal fats and such.
Tofu is another possible but can't comment on that as could never stand the stuff.

What a great pal you are bednobs. As a vegetarian, if I were in her position, I'd love it if someone were to cook me a selection from the following:
Shepherdess pie - fry the onions/celery/carrot as you normally would and add half a tin of green lentils, some tinned toms, stir in some tom puree and some tasty stock. Add potatoes as normal and freeze.
Vegetable lasagne:

Leek and Potato bake: Leeks, potatoes in a cheese sauce
Cauliflower and butter bean bake: Cauli cheese with a few butter beans thrown in
Ratatouile: Which I could have on jacket potatoes one day and on pasta another.
Vegeable curry: which I could have with microwave rice
Three bean chilli: Again have with microwave rice or on a spud.

Maybe go light on the beans if she's in bed and replace half the amount with some green beans or mushrooms instead.
