I know I am going to regret asking this but does anyone know how they make kebab meat?

What do you mean by a meat kebab?
Given your supposed vegetarian health kick you would do well to marinade cubes of meat in garlic, lemon juice/zest, chilli, various herbs you have to hand and griddle on a hot pan and serve with salad and a low fat yogurt tzaziki.

Kebab Meat is traditionally beef, lamb (mutton), chicken, and/or even veal that is arranged in a cylindrical fashion on a large skewer that turns in front of a heat source. It is cut and served as it cooks. http:// tinyurl .com/b5 fzju5
So rarely have one these days, but yes, they taste great.
But one has to specify what kebab in order to answer the question.
I used to go for the doner when I used to get one. Complete with the hot sauce. No rabbit fodder.
