Breaks When Cycling

I have enjoyed cycling for many years now, but in the last 12 months I haven't done much, but recently started again. Can any fitness experts tell me: if I cycle up a big hill, is it better from an aerobic / cardiovascular point of view if I take a break to get my breath back and let my heart rate reduce, before moving on to the next big hill, or is it better to just continue without a break? I am of the opinion that if you have a rest every so often, your heart and lungs get more of short workout and so learn to 'relax' better, before you give them another work out. I saw a program recently which recommended an intense burst on a exercise bike for short period of time, x3, 3 times a week. If that's the case, wouldn't cycling up a hill then resting give you the same benefits, or should I just carry on non stop?

Go more slowly up hills so that you don't go into oxygen debt unless you want impressive thigh muscles and an excuse to buy new trousers.
You would be better carrying on but riding lightly (little effort) between hills rather than stopping
I think taking it easy and being in correct gear is the only way to get uphills. I never get off and walk no matter what the hill. I have cycled for over 40 years now so am used to it. Enjoy your cycling, no matter how you cycle it will do you good
