1. Someone has sent me a text with a photo in it, how do I use that for their phone contact pic? (as it's not in my gallery)
2.is it possible to reverse "photo me" and not just outwards?

If it is in a message it will be in your media file but if it is on your memory card as opposed to on your phone you can;t use it in your contacts and so if that's the case, find it on the memory card and save it to your phone
