I am blind baking quiche bases using the method set out in this recipe http://www.bbcgoodfood.com/recipes/2197/rocket-mushroom-and-bacon-quiche The problem is the base rises as if it had air pockets trapped in it. I make sure the pastry is pushed well down. Any suggestions where I am going wrong?

I fill the dish to the top. When I remove the them the bottom is completely flat.
are you pricking the pastry base before you blind bake ??
You are using plain flour, aren't you? Quite honestly, I don't bother baking blind. So long as you cook the quiche a bit lower in the oven it cooks well.

i dont understand - you say the base is rising but them you say when you remove the beans it's completely flat?
Just prick the base all over with a fork before putting in oven - no need for baking beans at all.
