when i make pancakes i use plain yoghurt,but i have ricotta i am trying to use up,can i use this instead of the yoghurt,i am putting blueberries in it,and do i just follow the recipe the same as i would with yoghurt

For more on marking an answer as the "Best Answer", please visit our FAQ.They would be too heavy using ricotta, yoghurt is 'live' and used as a slight levening agent where as the fermentation has taken place in the cheese, so it's not offering anything accept as a binding agent - you could use a spoonful or two and add an egg, I suppose - but they won't turn out like your yoghurt ones.
