Making Sushi or Sushami

Can anyone advice me on how to prepare the fish for sushi. I read on a website to use saltwater fish as freshwater may be contaminated with Parasites- any more advice....?

go for vegetarian sushi
The fish needs to be very fresh so unless you live near the sea I wouldnt try it. A lot of shop sold sushi is sold using smoked salmon so you could use that as an alternative. But sticking to Vegtables is not a bad idea.
If you are determined to use fish, then when you buy it, ask the fishmonger whether you could eat it raw. He will not say yes unless he is very sure, or very silly!!! From experience, M&S are one of the few "mainstream" sources who have OKd this to me. Some good mail order ones such The Fish Society are worth a try as well. Good Luck
