For more on marking an answer as the "Best Answer", please visit our FAQ.Form a pocket, fill with smoked salmon and goats cheese with a few sprigs of dill. Seal with cocktail stick, dredge in flour, egg wash and breadcrumbs and cook 'til done - 20 mins or so on gentle heat.
Serve with sweet potato and parsnip mash, or puy lentils, or salad and crusty bread, or red rice, or couscous with a little spicey seasoning and some chopped apricots.
Or, do a little different thing with them - mince finely, season with whatever is about - diced pepers, dried fruit, herbs, chilis etc. Form into balls and deep fry, or poach ina little stock, or like 'normal' meatballs cook gently and serve with a afvourite sauce on pasta, rice, with veg etc. (if you want a different 'pasta', take a courgette, wash, slice down the lebgth to make thin strips (a mandolin does this best if you have one) and boil for 2 mins. Makes a change from wheat pasta and confuses your guests!

Cut into 1" squares and marinade in teriyaki sauce....preferably over night. Stir fry in a wok with a little olive oil, a small piece of chopped fresh ginger root, some chopped garlic gloves, a chopped red onion, half a sliced pepper and any other veg of your choice. I also put a small bag of bean sprouts in and half a medium chopped chilli.
About half way through, i add some soy sauce, a pinch of brown sugar and some lime juice. Serve with new potatoes (boiled for 8 minutes then roasted in the oven with a little olive oil and drizzled with honey)
Slice each breast into thin fillets and gently grill. Make a gravy with chicken stock and lemon juice, simmered to reduce and thicken. Dry fry some pine nuts. Serve on a bed of wild and plain rice cooked in chicken stock, and top with the gravy, pine nuts, some chopped parsley and shavings of parmesan. Delicious!
