Usually done in pairs with either Two fingers (scissors), open hand (paper) or fist (stone). The hand was waved in time with the three syllables, and on the final one either scissors, paper, or stone was revealed. Paper wrapped a stone, so paper won. Scissors cut paper, so scissors won and stone blunted scissors, so stone won. Clever, eh ?
Usually played to decide, say, who was ' it', remember ? Oh, the fifties !!
And what about Jump diddy knacker. That's another story.
what about the clapping games that girls did to various bizarre tunes, one I remember was:

I too remember British Bulldog and Sticky toffee and Oranges and Lemons, but some kids got a bit carried away with the chop off their heads parts.
I was only in Ed in Uk till 19 85 so all these are pre 85.

the tune i remember is
"we are the st catherine (or name of school) girls, we wear our hair in curls, we wear our dungarees up to our sexy knees. the boy next door he got me on the floor, he counted up to three and stuck it into me. my mumma was surprised to see my belly rise, my dadda jumped for joy it was a baby boy!!"
worst thing being we were at primary school so under 11!!!
