www.seat61.com gives very useful advice. We did something similar travelling back from Rome. The only other advice I would give is check out the local train journeys. Certainly, in Italy, it was slower but considerably cheaper to take the local trains rather than the fast ones, similar to the Intercity trains here. My brother's parents in law live in Spain, I will ping him an email and see if he has any info :)
Agree absolutely with Anngel but a tiny word of warning. Some of the key train routes between southern Europe ports, capital cities and the Channel ports have become a favoured route for illegals and criminals, and they are attracted to the cheaper trains, so paying the premium will give you a seat and greater peace of mind.
When waiting for and getting seated on all trains on these routes, be on the outlook for thieves and scammers - 'helping with suitcases' etc
The bad 'uns are adept at spotting anyone looking uncertain or disoriented and will target them.
As with all travel Yansee, be aware but not deterred. Stick to the main direct routes rather than the slow local trains and check the eurail website before you go.
