Potato Scones

I need to make potato scones for someone with kidney problems. Potatoes have a high potassium content and so I need to double-boil potatoes to lower this and thus shop-bought scones are out of the picture (unfortunately). I have tried and tried but cannot get my scones anything like shop ones. This means the person I make them for, doesn't like them! (She also has learning difficulties). Can anyone help me please?

Our worst experience was in a pub in Cambridge when the hospital hadn't picked up on OH's high level that week. He became paralysed and I had to hoick him over my shoulder, put him in the car and whizz off to a hospital....seems he was lucky that it stopped his legs working because the levels he had usually stopped the heart...Nearly spoiled a Joan Baez concert. ;-) x
