if a pedestrian is someone who is walking,would i be correct to say i`m just pedesting to the shop? I`m taking the dog for a pedest?

Of course, there is no reason on earth why you shouldn't speak of going for "a pedest", if it appeals to you. The problem is that some people might well imagine you really mean 'pederast'...at least if you were a man! (Look it up.)
