Does anyone have any interesting ideas how to cook chicken breasts or joints? My children don't like spicy food and I need something low fat, but I really struggle to come up with interesting chicken ideas. I'd be really grateful fo a few ideas

For a quick snack put cooked sliced chicken breasts into a tortilla wrap, along with some reduced fat cheese and some sauce that they like. Roll it up and heat it up, preferably in a George Forman grill it works best. Yummy.

I've just got in from a meal in a pub where I have chicken breast stuffed with mango. Very nice. I don't know how it was cooked but I'm sure you could bake it in an oven.
Would diced chicken be acceptable? I make a chicken risotto with diced chicken and bacon, red peppers, peas, mushrooms, rice, and a can of Campbell's low fat condensed chicken soup diluted with water. It's quite tasty and filling, and you can substitute the vegetables for whatever you want - I've used carrots and sweetcorn as well.

How about a chicken stirfry with loads of healthy vegetables and beansprouts.

Bet you've already tried this, but we love chicken breast wrapped in lean bacon. and cooked in the oven. So simple!
What about some form of chicken kebab on bamboo or metal squewers? The could be served on rice and you could have vegetable squewers as well - not sure if its ok to cook them on the same squewer so seperate would be best.
we love this one: cook 2 chicken breasts in a large frying pan until alsmost done, add a diced onion and continue cooking, the chicken should be just about sticking to the pan by now, add half a dozen sliced mushrooms and stir - making sure to bring up the stuck on chx from the pan, add half a tub of Elmlea (reduced fat) cream, reduce heat and simmer - season to taste. It might sound pretty iffy but trust me it is absolutely delicious. QuibbMed is a chef and she has yet to perfect my Chicken Thing despite many attempts!
Not very chef or exciting ..but mam in a rush ... My kids enjoy a chicken breast fillet cooked in a fry pan or griddle sprayed with that 1 cal extra virgin olive oil (most supermarkets) with a jacket potato and tinned garden peas. The only problem is they do like butter & cheese & mayo with this, but you can get low fat. It is very quick, some people might think not very exciting but all the flavours go really well. Also again mam in a rush (I do take my time some days) Colemans chicken chasseur mix with chicken fillets onions & mushrooms is nice with boiled potatoes & veg and not spicy.
OR.......... butterfly breasts (slice 2/3 through the fattest part and open up. very finely chop or press 1 glove garlic, 1oz butter and 1 tsp parsley. mix the parsley, butter and garlic then spread over inside of chx. roll chx. roll the chx in breadcrumbs, wrap in foil and bake in a medium oven. Chx kiev without the additives!
