Has anyone a good reliable recipe for caramelized onion marmalade. I know could google one but would prefer a tried and tested recipe. The ones I've looked at have a bottle of red wine in the ingredients but I'd rather drink the wine with the cheese I aim to eat with the marmelade. Thanks in advance!
I don't really use a recipe for it but I slice up 6-8 red onions, sweat them in some butter and olive oil until very soft, turn the heat right down, keep the lid off and add brown sugar, balsamic vinegar, salt, pepper, fresh thyme and cook until thick and syrupy...usually takes 50 mins-1hr.
