wack some biscuits of your choice (ginger, digestive, hobnobs) in a plastic bag to make crumbs. Put crumbs into the bottom of 4 - 6 wine glasses or dessert cups. In a bowl mix a tin of sweetened condensed milk with the same quantity of whipping cream -best to do with electric whisk if possible. Add the rind and juice of two lemons, mix lightly and divide between cups. the mixture will set like a creamy cheescake. Serve with some thin twirly biscuits or a dollop of whipped cream.
Hot fruit salad.
All white fruit but not citrus or pineapple. Tins of apples, pears, lychees, a few grapes and chunks of banana. Leave banana until last. Open tins, put fruit in metal or pyrex bowl with brown sugar and rum/brandy, leave for hours if you like - or minutes. Just after adding the bananas, put in oven. Any heat, depending what is already in the oven. When it is all hot, add more brandy/rum, flame it and serve.
Cream if you like.
Doddle.

Pinched this one from Nigella and it's delicious, but very very rich. Whip double cream till almost thick, then stir in some good quality lemon curd (if you have time, make your own, it's easy peasy). Chill, and just before serving crumble some meringue into the mix (crushed shop bought meringue nests are fine). Abso-blimmin-lutely gorgeous
Fresh raspberries with a bit of Kirsch on them – and a blob of Green & Black’s vanilla ice cream with chocolate sauce. Superb!
