Line a dish with shortcrust pastry, and bake blind until cooked.
Spread the base with SEEDLESS, raspberry jam.
Make up some instant custard, but add a couple of tablespoons more that you think you need, so it makes it very thick.
While the custard is still warm, spoon it over the jam.
Sprinkle coconut over (the custard) and put a halved cherry in the centre.
