Cheeseake With Coconut Cream
4 Answers
My daughter found some u.h.t. coconut cream in my fridge and some full fat soft cheese spread that's nearly out of date, she wants to make a cheese cake from them, will it work? and what else will she need?

Here's a recipe Cecil, I'd just leave out the mango and use whatever cream cheese you have instead of mascarpone. http://www.c eltnet.org.u k/recipes/mi scellaneous/ mobile.php?r id=misc-coco nut-mango-ch eesecake Let us know what it turns out like..

Thanks rocky, we used whipped cream and icing sugar instead of condensed milk since that is what we had, and left the sugar out of the biscuit base as we thought it would be too sweet, and used a raspberry and peach topping, there was not a crumb left so I can say it was a great success, I have never tried 'messing about' with recipes before, but this was lovely.
Yes just to get the quantities of main ingredients right, seems that once you do that you can mess about with the other bits and bobs, I can't remember why I bought coconut cream in the first place, but it worked and did not taste of coconut at all, maybe its healthier than dairy, thanks again rocky.
