Meats in a Protective Atmposphere

I often buy uncooked chilled meats that state that they are packed in a 'protective atmosphere'. What is this? Is it sulphur dioxide or a similar gas to prevent bacteria formation. Also, how long can the meats be stored in the refrigerator once the packet has been opened (I guess opening the packet diminishes the sell by date by a considerable amount).

No its nothing to do with all that. The people who pack it are very caring and want to ensure the meat is quite safe and comfortable so they provide a loving and nurturing environment. They hug and cuddle the meat and give it sound advice on risk taking.

The protective atmosphere is probably nitrogen (a fairly unreactive gas which makes up nearly 80% of air). This is to keep out oxygen which would take place in various chemical reactions causing the meat to go off and also allow the growth of bacteria. Once the pack has been opened I would cook the meat that day.
