Hi there, I'm really tring to get into cooking at the moment (it's my new found hobby) only I find reading through the recipie books boring. Last week I made risotto wih chicken breast wrapped in bacon and that went pretty well.
Now I'm cooking for my fella's mum at the weekend and don't know what to do!
Any suggestions? We're not fussy eaters :)

This is Cod in Parsley Sauce
3 nice sized pieces of Filletted cod from fish monger
Packet of shallots peeled and finely chopped
1 Tub of Mascarpone
1 Small bottle white wine, we like muscadet
1 big bunch of curley parsley finely chopped
Butter and little olive oil to fry in normal olive oil not virgin/extra virgin
In a large non stick frying pan....
Start by frying shallots in little bit of oil and butter, for about 5 mins
Pour in the bottle of white wine and simmer for about 5 mins till slightly reduced
Add all the parsley and, again stir it all in and simmer for 3 mins
Add in all the tub of mascarpone, and stir till all mixed and cook for another 2 mins just to make sure the mascarpone is incorporated and melted in.
I don't add salt but grated pepper is fine.
remove the cooked sauce to a jug and wipe the pan before you cook the fish.
Add a little oil and butter and melt down before adding the fish.
Fry both sides until cooked, depending on thickness of fish it shouldn't take longer than 5-7 mins each side, you'll be able to tell as it will start to look like it's coming apart.
Put on plates and serve with new pots and french beans with sauce poured over fish.
enjoy with white wine.................
