Because cooks are notorious for having one hand and thus twice as many are required to achieve an acceptable number of hands.

a. Out of sight, out of mind.
b. Absence makes the heart grow fonder.

a. You're never too old to learn
b. You can't teach an old dog new tricks....

and so forth. Wisdom, you see, simply can be two-sided.
