Gluten Free, Non Dairy Vegan Coming For Christmas.........

What can I make him? We will have the usual roast etc & I know he'd be happy with a plate of vegetables but is there anything anyone can suggest to make it a bit more special.

Get a big leek and carefully remove the layers, blanch in boiling water, remove and lay on a clean tea towel. You'll only need two or three.
Fry the remaining leek overa low heat until really soft, add some garlic along with with finely diced carrot and celery. Add to this mix some puy lentils along with some chopped chestnuts and a little thyme. Season to taste.
Let the mixture cool a little and then place a spoonful on the leek and fold into a parcel.
Place on a baking tray and brush with oil, bake in a moderate oven for ~20 minutes or golden and hot thoughout.
The filling can be prepared a couple of days in advance and kept in the fridge.
I'll have a think about some other ideas.
