Opencast mining is where the top soil and rock is dug out to expose whatever it is that needs mining. this is used where the material that needs to be mined is close to the surface.
The "top soil and rock" above "whatever it is that needs mining" is called the overburden.
Rather than exploiting a seam or concentration of the target mineral by means of an adit or deep mine, it is exposed by removing the entire overlying material.
There are many economical, geological and logistical reasons and conditions that dictate whether deep-mining or open-cast mining (or even any mining at all) takes place, but it would take about ten max-length answers to even scrtch the surface (no pun intended) of the subject.
