(Malmo, in Sweden, is worth a visit and it's only a short train ride away. There are also some nice coastal resorts near Copenhagen).
I've not been to Stockholm, so I'm unable to comment.
Barcelona has got everything. (Beaches, bars, restaurants, museums, history, culture, etc, etc.).
I'd suggest going to Barcelona in May but visiting Copenhagen (and Stockholm) at a later date, preferably in the summer [which can be very short in Scandinavia]

Stockholm, so much to do and see. Take a ride on the RIB boat through the archipelago, so exciting. Get a Stockholm card and get free transport and free entry to almost everything whilst you're there. We stayed at The Rival hotel, not cheap but we got a good deal to include breakfast which was fantastic. I've also been to Barcelona and Copenhagen. Second choice would be Barcelona but it's not as safe as Stockholm, you need to watch your handbag there.
Barcelona's cheapest and has more to see, especially if you're into archietecture. But May with its long days might be the best time to see the other two - at this time of year it's dark most of the time there, whereas Barcelona still has plenty of light, so you could leave Barcelona for the off season.
