Anyone have any tried and tested suggestions for the above? I'm cooking for 8, possibly 9, but one of them (my mum) doesn't eat meat though she loves fish.
She always says she'd be happy with just the veg, but I usually do her a salmon steak with a home made sauce of some description.
What I'm after is something that can be prepared in advance and just popped in the oven, that will go with roasted root veg & stir fried brussels.

The great thing about the BBC Good Food website is that it allows people who've actually tried the recipes to rate them and to leave their comments (thus meeting your 'tried & tested' requirement).

There are lots of possibilities here:

Many of the pies, Wellingtons, etc would lend themselves well to being cooked in advance and just heated through in the oven.
Fish pie.

I did have a look at the bbc good food site, but although the recipes sound nice I'm already doing a large selection of veg.
Hadn't thought of fish pie ummm, its usually something I'd make for an everyday dinner, I'll see if I can find a recipe for an extra special one.
Holland and Barrett do a vegan Christmas roast, it even has pigs in blankets..My daughter is vegan and has had this for the last 3 years, says it's very nice - even has enough left over for sandwiches.
does she like lobster? you could get a thermidor already done from m&S and pop it in the oven when ready, bit of a cheat i know, but nice and a treat for your mum

not sure it would go with the veg..... I'd eat it but then....

I've used this Mary Berry recipe before and it is gorgeous. I serve it with cranberry sauce, which goes really well with the chestnuts.
Morrisons are doing a lovely-looking 3 fish roast this year, I've just bought one, £6. http://your.morrisons.com/christmas/Pre-Order/Fishmonger/
^^ You don't have to pre-order, it's in the fish cabinets now.

Thanks for the replies, some great ideas there, particularly like the look of the 3 fish roast, thanks for that boxtops. There's a morrisons just up the road too, so that's a distinct possibility.
