My question is what do others do with their huge turkeys after Christmas dinner, they are far too big to fit in ordinary size fridges. I am lucky as we have a caravan in the drive and it is perfectly cold in there, so is always stored in there for a few days until I carve the rest of the meat off it.
Curing bacon/gammon was designed in olden times to preserve the meat. That said, the cooking process does remove a large proportion of the salt. If it had been fish or chicken (or rice) it might have been dodgy. But my aunt keeps her Christmas turkey in her gas oven (which obviously has a pilot light) for up to a week to no ill (no pun intended) effect.
