Eccles, I'm mad keen on crackling and not the soggy fat, but will take it off, put on tinfoil and fire it in the oven (after cooking the pork)
Now, if a peanut can ping off one false tooth, I'm aiming to be gumsy tomorrow night :-D
Alba, take your pork out of it's wrapping and put on a plate in the fridge.

If it hasn't already been scored get yourself a sharp kitchen knife, a craft knife or a Stanley knife (with a new blade) and score the skin.

Take out the fridge an hour or so before you are ready to cook it.

If you want to season then do it just before cooking.

I don't know what joint you have but if I'm cooking belly and am not impressed with my crackling at the end of cooking I whack it under the grill.
If you cook your pork nice and slowly the fat will render off and can be used for cooking roast tatties!

Taking the skin off to make separate crackling makes carving easier!

Enjoy your pork and don't forget to use some cider for your gravy, chef's perk is the leftover cider.
I never have left-over cider :-D

Was thinking about slicing the fat off and shoving it an uber-hot oven whilst port rested and was then sliced.

Bummer, now I need to see if I need to buy apple sauce, can't have port without apple sauce!

Whiplash is still pretty bad, Alba. Neck movements are painful and restricted in all directions with pain radiating into the shoulders bilaterally. I have pain in all joints of the left upper and lower limbs and I've had one episode of right wrist pain. I've had intermittent headache too.

What's really cheeses me off now is that I informed the new insurance company (whose policy didn't even take effect until 2 days after the crash) and they've put an extra £100 on my policy because it goes down as a fault accident on my part until such time as I can provide proof of non-fault - I.e. the other party settles the claim!!

NoM...are you being asked to pay this £100 upfront? The same happened to me when someone hit my parked car. I must have been in a bad mood because I refused to pay the £100 and kicked up a merry fuss. I knew it would be refunded as the other guy had admitted liability but I sometimes get fed up with insurance companies.

They let the £100 go....I didn't pay it and was really surprised sometime later to get a refund cheque for the £100 I had refused to pay.

Did I cash it or was I honest and sent it back?.......☺

Your case may be different of course with a new company....bloody bad timing for you.....x

I just thought it might be worth reporting as the driver has produced fictitious witnesses and might be one of those insurance scams and it would be good if it had been caught on camera

Gness, I had to pay £15.31 immediately by debit card and the rest will be spread over the DDs. I will be kicking up a giant fuss once I speak to Solicitors, etc
NoM....it really pi**es me off when they take advantage....How much must they make from having your money...even temporarily?

I used to be stupidly honest and fair with insurance companies....I'm rethinking...x
