Companies don't have to let you carry holiday over but many do (albeit often with a time limit of when to use the carried-over days). You'll need to check with your company. Even if they don't have such a policy or the time-limit is too short, there's no harm in asking nicely if they can make an exception.
If you are not successful at carrying over the leave you should still be entitled to full pay for the leave days. From the CAB:
If you become ill while on holiday and your employment contract does not allow you to take time off at a later date, you should get a mixture of SSP and holiday pay to make up your wages to your normal amount of pay.
