However, I think the name of the dish translates to "penne with chicken in the house style". Therefore if it's something you had in a restaurant, any recipe you find found may not match up! Any chance you're looking for the disk from "Ask"?.
I suggest you get some chicken tonight sauce. Slice the chicken, pan fry it, turn down to a simmer, stir in the chicken tonight mushroom sauce, grate in cheese and stir that into the cooked pasta.
Good luck! :-)
Ok, having read this thread and on the premise I always end up ordering this dish, I attempted it last night with some impressive results.
Cut the chicken into 1cm wide strips and fry with a little olive oil until just starting to turn brown on the edges. Drain the oil off and add some thinly sliced mushrooms and a clove of garlic finely chopped.
Semi dry fry (using just the coating of oil that remained on the chicken) for a couple of mins and then add single cream and a good grating of fresh parmesan cheese.Season with salt and pepper.
Reduce down and pour over cooked penne pasta. Place in a gratan dish. Grate some mozzarella (the type you get in a pouch filled with water) and sprinkle lightly over the dish. Finish by grating a little more parmesan over before placing under a very hot grill until slightly golden on the peaks.
This was very, very close to the Ask dish. Maybe it would have benefited from a little fresh basil?
I took the basis from the description on the Ask menu -
Penne al Pollo della Casa - Chicken and mushrooms in a creamy parmesan sauce topped with mozzarella and baked in our pizza oven.
Try it, it's easy, quick and less than 6.95 a dish to make!!!!!
Enjoy
