Star Wars Episode III- Revenge Of The Sith...

...Not a massive Star Wars freak, I have to say, but I watched this last night for the first time and would like to know where Moff Tarkin and the other Death Star officers come from. They are not clones, nor are they Sith, so who are they?

I always supposed that when it came to choosing sides in the Star Wars folks either became part of the rebel alliance or joined up to the Empire. There was one comic where you saw two lads and one became a stormtrooper and there was a load of other guys all lining up to collect their, err, helmets.
Remember that the Stormtroopers in episodes 4-6 are not all clones - that's why they don't have New Zealand accents like they do in the prequels...

My guess is that the Stormtroopers are basically the ground soldiers, an army, whereas the officers joined up as naval or army officers.
The stormtrooper army is only a small element on a ship/death star, you get all the bridge crew, admin, engineers, deck crew, operations, support, etc. Any vessel would require these irrespective whether they're stormtroopers or not (which aren't the brightest sparks around) ;)
When the republic becomes the Galactic Empire and lets say 'expands' it then recruits more and more throughout the galaxy. Note that they only recruit humanoids as if they're superiorist.
