It's all to do with how much is switched off inside - a laptop will wake up faster from 'sleep' than 'hibernate', but will drain its battery slightly faster during the period that it is 'off', because more power is being drawn.

'shut down' turns everything off & saves the battery - but then the restart takes much longer.
