If 2 people make a contract through a solicitor and one person breaks the contract can the other person sue them? Also is it necessary to have witnesses sign the contract or is it legally binding if just the 2 parties and the solictor sign

Provided it is a legal contract (offer/acceptance and consideration are included )then yes, the aggrieved party can sue for breach of contract and
any pecuniary losses incurred.
It doesn't even have to be in writing, except for contracts for the sale or disposition of land, although a written contract is easier to prove. No witnesses are necessary.
and no you dont need solicitors

and you certainly dont need a solicitor to do it
see other threads
and kick off at the MCOL site here
https://www.moneyclaim.gov.uk/web/mcol/welcome

if you goggle MCOL the fourth quoted is one of those 'falsies' - a look alike site that charges for use

oh and by the way the solicitor is witness
but will quite naturally charge around £200 / h for his time what you can do yourself

if you want the other side to do something inthe contract and he hasnt then you will need 'specific performance' and will beed help for that one
