Blessing does not make food kosher. That is a common misconception.
And wheat is only one of many things that cannot be eaten on Passover. As with most religions, people observe Judaism to varying degrees. For people that keep strict kosher, all processed and packaged foods must be rabbinically supervised.
Hiya lonnie. The aish website is a great one for basic Jewish guidelines.
But... where do you see that it has to be blessed? I am a bit confused as I have kept kosher for 28 years, and my food is not blessed before I buy it.
It is true that one is supposed to make a blessing before and after eating, but that has nothing to do with the food's kosher status, it is more like how the Christians say '"Grace".

I had suggested for the others, that they use the 'Ask the Rabbi' link on that site, however, to answer your question deeselsbride, in normal everyday day use, your right, not everything Kosher has to to be blessed, but Passover is a religous festival, okay, its for a week, but even so, for this week, it goes out tomorrow, everything has to be 'Kosher for Passover', that means, all food, regardless of what it is, has to be overseen by the Rabbinate, and at the same time, Blessed, it would be impossible for everything to be Blessed at individually, its like a mass blessing, at the time of packing etc.
