I Have Just Bought Myself My First Food Mixer...a Kenwood Prosper 900W.

But after using a electric hand mixer for so many years I am not sure how long the mixer should be on for mixing marg and sugar together and then eggs, flour ect.? I have tried to find a recipe but cannot find one.. But I have also read you mustnt have it on too high or for a long time? Mnay thanks

Start any mix slowly, then speed up as the mixture start to combine so the dry ingredients don't escape from the bowl in a cloud. Slow speed is also better for thick or tough mixtures. Timing is easy, watch the mix, when it looks like you want it to, then stop. be careful when whisking cream or eggwhites, if you over do it the cream will turn to butter and the eggwhite will collapse. Stop and check frequently.
Hi Woofgang. Many thanks for that....I have just made one with your help....it doesnt look as light as the others I used to make but hope it tastes ok... it isnt for me but a birthday cake for someone else. typical.! Is it possible to over beat it do you think.? I will have to use it a lot more in the next few weeks and try different things. Thankyou again , Brenda
