Rhubarb Crumble For Diabetics
I have guests for sunday lunch. main course all sorted but wanted to do a crumble for dessert but one person is diabetic, so instead of using ordinary sugar can I use Candarel if so how much would I need ? or can anyone else suggest a different pud with rhubarb ?

For more on marking an answer as the "Best Answer", please visit our FAQ.Deesa,if you want to use Canderel use the same volume,eg If you use 100 grms of ordinary sugar weigh it out then transfer to a measure. Say the sugar is 4 tablespoons then use 3 tablespoons of canderel (assuming you are using the granulated version). It says on the back that one teaspoon of canderel is the equivalent sweetness of one teaspoon of sugar. I always cook my fruit before making the crumble so the other alternative is to add the sugar bit by bit until it tastes sweet enough for your pallette.
A nice low carb pud with rhubarb. prepare and cook rhubarb using canderel and flavouring such as cinnamon or other spice. place cooked rhubarb in individual serving glasses. Whip double cream with a little vanilla extract,place on top of rhubarb and sprinkle toasted almonds on top. For those that are not diabetic serve some ginger snaps with it. Sometimes if I have it I add some chopped ginger in syrup to the whipped cream and add a little of the ginger syrup to the cooked rhubarb. My rhubarb is just poking through so we'll be enjoying this soon.
