Whilst in my local Morrisons I note they are 'giving ' away knives if you spend money and collect vouchers. I am puzzled though as they are advertised as 'Professional' so what does make a knife Professional?

It means they are used in a professional capacity by professionals (chef(s)).

That was quick, seems sensible enough, thanks
Personally I'd suggest buying a good ceramic knife if you are a keen chef. The wife and I have a £290 ceramic knife set. The only issue with ceramic knives is that if you drop them on a hard surface then they will shatter.
Sorry to disappoint, but...often the word "professional" is used as a marketing tool. It makes things seem better than they actually are....gives them some kudos that they don't possess!
That is why I said chef(s) gingejbee. It only takes 1 chef to say "I've used this brand of knives in my Michelin **** restaurant for 3 years and they can market it as being professional.
I have got 45 stickers so far. I can't decide which professional knives to have!
A knife is 'professional' if it is of the type that Jack the Ripper would carry.
...That means I have spent £450 at Morrisons. So, hardly a 'give away'.
Morrisons tilly! I thought you'd be a Waitrose gal:-)
The knives are made by Sambonet (Italian firm) who describe their knives as "professional performance quality". So, marketing weasel-words that don't mean that much.
You can easily spend ~£120 pounds on a 12" chefs knife. It is extremely doubtful that anything of that quality would be part of this offer though.

The use of the word professional is a marketing term in this instance.
They also offer a chopping-board and I'm saving stamps for that.
